Truly, butter bun is an essential component in Hong Kong’s western restaurant, which boosts up our appetite. 

Butter Bun Recipe 🍳

100g Bread flour
2g Instant yeast
10g Sugar
5g Milk powder
2g Salt
15g Whisked egg 🥚(for egg wash)
11g Butter🧈
20g Fresh milk🥛

Experiment 🧪

By following the same recipe and keeping the condition of the ingredients used unchanged, only the types of sugar used will be changed.
To trace the experiment, the volume of the butter bun will be recorded. It is because using the same weight of butter bun dough, the change in volume is inversely proportional to the change in density of the bun. Therefore, the larger the size of the bun, the lower the density. Thus, the bun with the largest volume should be the spongiest.

Science Behind 🔬

Sugar in the recipe act as the food of the yeast. As the yeast feeds on sugar to give off carbon dioxide gas. The carbon dioxide gases help to raise the dough and make the dough spongier and yummier.

However, people are more concerned about health nowadays. While different types of sugar have different nutritional values. White sugar is a type of refined sugar which is closely linked to obesity and other diseases. Therefore, white sugar is not good for health. 
While coconut sugar contains the same amount of calories as white sugar. However, its nutritional value is higher than that of white sugar.  Minerals and antioxidants are present in coconut sugar. Besides, inulin, a kind of fiber is present in coconut sugar. Thus, it contains a lower glycemic index which helps the control of blood glucose level.
On the other hand, honey is healthier as it contains different minerals, vitamins, and antioxidants. Besides, it contains lower calories per gram compared to white sugar  Thus, eating honey can prevent obesity and lead to better health. 
For artificial sweetener, some people may say that it is a chemical which might lead to health problems. However, as it is calories free, using artificial sweeteners can prevent obesity.

In this experiment, different types of sugar are used to find out whether honey, coconut sugar, and artificial sweetener can replace sugar or not.
